Basil Pesto Chicken Recipe

This yummy basil pesto chicken recipe will leave you wanting more. It practically makes me drool just thinking about it!



INGREDIENTS:

  • Basil Pesto (I used the Costco Kirkland Version)
  • Salt and Pepper for seasoning
  • Some additional oregano and basil (optional)
  • Chicken breasts 
  • Diced Tomatoes
  • Mozzarella Cheese

PROCESS:

Preheat your oven to 350 degrees Fahrenheit.
So basically this is a really simple recipe. You will need to pound your chicken to even thickness so that they all cook at the same time. (What I like to do is wrap each chicken breast in saran wrap and use a rolling pin to pound them to an even thickness)

Put your chicken in a bowl and season them with salt and pepper and then just smother it with some basil pesto, use your hands! Make sure that the chicken breasts are all coated with the pesto! Sprinkle some additional dried oregano and basil leaves on there as well, if you'd like. 


(I wanted to take pictures of this process but couldn't because my hands were really oily from the olive oil of the pesto)

Place the pesto chicken breasts on a pan lined with aluminum foil and pop them in the oven and let it bake for about 30 minutes.


At the 30 minute mark sprinkle the diced tomatoes and mozzarella cheese on the chicken breasts and bake them for an additional 20 minutes.


And there you have it, some yummy basil pesto chicken breasts!
