Baked Garlic Potatoes

Friday, May 23, 2014

Preheat your oven to 400 degrees fahrenheit.

I accidentally used aluminum foil but line your tray with parchment paper (the potatoes won't stick to it and it will be easier to flip).

Start your food prep by washing/scrubbing your potatoes and drying them off with some paper towels.

Prepare your garlic by peeling them and then mincing them.

Dice the potatoes into little cubes. (The reason why you dice the potatoes after you mince the garlic is because the potatoes will change colour really fast if they're not used quickly)

Once that's done, add in your garlic and sprinkle tons of dried oregano, basil, and thyme on your potatoes. Of course you also have to season with salt and pepper as well. Add in the olive oil! I like to use in a bit at a time until I see that the garlic/herb mixture has evenly coated the potatoes.

Mix it all up and spread the potatoes in a single layer on the baking sheet.

Cook for around 45 minutes to 55 minutes (depending on whether you like your potatoes super crispy or just cooked well enough).

They are ready to eat when they're done cooking. I like to use some gravy to eat with them!
