Yummy Carrot Muffin Recipe

I don't know about you guys, but I find carrot muffins to be absolutely delicious, and now that it's fall season, a carefully spiced carrot muffin with a nice hot cup of coffee is all I need to keep me happy!
So here is my recipe:
Ingredients:
- 1 1/2 cup of all purpose flour
- 2 and a half teaspoons of cinnamon
- 1/2 a teaspoon of baking powder
- 1/2 a teaspoon of baking soda
- 1/2 a teaspoon of salt
- 3/4 cup of white granulated sugar
- 1 3/4 cups of shredded carrots (approx 2 large carrots)
- 1/2 a cup of milk
- 1/2 a cup of butter
- 3 eggs
Instructions:
First of all, preheat your oven to 400 degrees Fahrenheit, then grease a dozen muffin cups
Secondly, separate the egg whites and yolks, and beat the egg white first with a whisk until they are frothy like, and then beat the yolks in, then add in the sugar and mix well.
Add the carrots, milk and butter and mix
Then in a separate bowl, take a sifter, and sift the flour, salt, baking powder and baking soda
Then add all the dry mixture into the wet mixture (slowly) and mix for about 3 minutes.
Finally, place the batter into 12 muffin cups
CREAM CHEESE ICING RECIPE:
1/2 cup of cream cheese
1 tablespoon of butter
1 cup of powdered sugar (icing sugar)
2 tablespoons of milk
1 teaspoon of vanilla
Mix the cream cheese and the butter,
And then slowly add in the powdered sugar, milk, and vanilla
When the muffins are cool, ice the muffins with the cream cheese frosting, it'll taste amazing!
